Fuego is contemporary, Mexican and Latin inspired cuisine. Flavors are drawn from Mexico, South America, and the Caribbean; and dishes are prepared using traditional French techniques and the highest-quality ingredients found locally here in the Pacific Northwest. My plates have just the right amount of boldness and spice to excite your palate without overwhelming it.

Fuego's style is tapas (exquisite small plates with a wide variety of flavors, colors, and textures) paired with wines from the Pacific Northwest. A typical service I do is 6 plates, perfect to keep the conversation and fun going.
